Blood Of The Dark Knight

I need help...just started planning my first brew and wondering if I've made any mistakes before I try it out. Would appreciate to hear from the pros and semi-pros.

Beer: Blood Of The Dark Knight Style: Imperial Stout
Type: Extract w/grain Size: 5 gallons
Color:
364 HCU
Bitterness: 67 IBU
OG: 1.114 FG: 1.020
Alcohol: 12.1% v/v (9.5% w/w)
Water: Lots of quality water loaded with minerals (possibly Smart water; even though I'll be spending a pretty penny)
Grain: 1 lb. American crystal 120L
1 lb. American black patent
1 lb. Roasted barley
Boil: minutes SG 1.142 4 gallons
10 lb. Dark dry malt extract
1 lb. Cane sugar
1 lb. Molasses
Hops: 3 oz. Nugget (12% AA, 60 min.)
1 oz. Nugget (12% AA, 10 min.)
Yeast: Super Yeast X-Press (for Mead)
Log: 3 lbs of fruit at the bottom of the fermentation bucket before the wort.
Carbonation: 1.8 volumes Cane Sugar: 2.22 oz. for 4.5 gallons @ 70°F
