Scotch Ale

Great E/G Strong Scottish Ale recipe.

Type: Extract w/grain Size: 5 gallons
Color:
41 HCU (~19 SRM)
Bitterness: 31 IBU
OG: 1.079 FG: 1.020
Alcohol: 7.6% v/v (5.9% w/w)
Grain: 8 oz. Crystal 10L
2 oz. Roasted barley
1 lb. American crystal 80L
Steep: 155° for 45 minutes. While steeping grains, I boiled separate 1 gallon w/ 2 lbs DME down to 1 qt to caramelize and then add to main boil.
Boil: 90 minutes SG 1.060 6.5 gallons
8 lb. 4 oz. Light dry malt extract
Add remaining DME. Boil for 90 minutes. IM at 15 min.
Hops: 1.25 oz. Fuggles (4.6% AA, 60 min.)
1 oz. Fuggles (4.6% AA, 45 min.)
Yeast: Wyeast 1728 - yeast cake from earlier Scottish 70-/
This yeast is the key - WLP does not have same smoky hint.
Log: 8 days primary, 21 days secondary @ 64-68°.
Tasting: Fantastic beer made for sipping with a decent alcohol kick. The Wyeast 1728 makes this beer. DON'T use peated malt in your Scottish beers (or if so very sparingly, say 1 oz. or less). It provides too much smoky phenolic taste. Much more mellow smokiness with the yeast alone.
