Upstream Gold

I made this for a fishing trip July/August 2007. It was going to be hot out, so everyone wanted a light, thirst quencher that was not wimpy.

Beer: Upstream Gold Style: American Pale Ale
Type: Partial mash Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 27 IBU
OG: 1.048 FG: 1.010
Alcohol: 5.0% v/v (3.9% w/w)
Water: Microfiltered, R/O, UV water from market vending machine.
Grain: 3 lb. American 2-row
8 oz. German Pilsner
1 lb. American crystal 10L
Mash: 65% efficiency
Mashed all grains at 154 ° for 60 minutes. Sparged with 3 gallons 167 °
Boil: 60 minutes SG 1.040 6 gallons
3 lb. Light dry malt extract
Irish Moss @ 15
Hops: 1 oz. Northern Brewer (8.5% AA, 30 min.)
.25 oz. Cascade (6% AA, 15 min.)
.25 oz. Cascade (aroma)
Yeast: Yeast 1056-put this batch on top of previous yeast cake in recently emptied carboy. WOW, talk about a quick start. 10 minutes and the wort was fermenting like crazy. Finished primary in 4 days.
Log: Brewed 7.7.07
Fermented at 68-72 depending on the weather!
4 days primary (fast start with yeast cake)
1 weeks secondary at 70 °.
1 week in frige at 40 °
Carbonation: Force carbonate at 16 lbs at 38° f
Tasting: Excellent, just what I had hoped for. Just enough complexity to keep it from being boring, and light enough for a 3 day session! Next time it will be all grain-I just got a decent mash tun.
