Sweetwater IPA Clone

This is my first stab at my favorite house beer. I'm using some leftover WLP011 yeast from my last batch. If I were starting from scratch I might consider WLP001 or WLP005. We'll see.

Beer: Sweetwater IPA Clone Style: India Pale Ale
Type: All grain Size: 5.25 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 54 IBU
OG: 1.060 FG: 1.012
Alcohol: 6.2% v/v (4.9% w/w)
Water: I use filtered water. I put a PUR filter on my kitchen tap to clear the water of chlorine and other gunk.
Grain: 8.50 lb. American 2-row
0.94 lb. American Munich
7.6 oz. American crystal 60L
0.94 lb. Flaked wheat
Mash: 80% efficiency
Single infusion mash @155 50 min. Mash out @167 10 min. Sparge w/ 175 deg water and collect 6.25 gal.
Boil: 60 minutes SG 1.050 6.25 gallons
Vigorous boil to boil down to 5.25 gal.
Hops: 1 oz. Columbus (14% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Columbus (aroma)
1 oz. Columbus (dry) (aroma)
1 oz. Kent Goldings (dry) (aroma)
Yeast: White Labs WLP011 European Ale Yeast, harvested from previous batch.
Log: Ferment at 70-72 deg until done. Secondary for 2 weeks with dry hops. I also aerate my work with pure oxygen.
