90 Min. mash @ 156 F
Boil: 90 minutes SG 1.059 13 gallons
2 lb. Fireweed Honey
Irish Moss used last 20 min. of boil.
Hops: 1.5 oz. Amarillo (9.6% AA, 90 min.)
.75 oz. Cascade (7% AA, 45 min.)
1 oz. Willamette (5.4% AA, 45 min.)
1 oz. Cascade (aroma)
.50 oz. Willamette (aroma)
Yeast: Wyeast London Ale, and W. Yorkshire Ale from Wyeast. Different Yeast for each 5 Gallon fermenter.
Log: Added Honey, and Aroma Hops after boil, before chill.
Dry Hop with 1 oz. Cascade for London Ale.
Dry Hop with 1 oz. of Willamette for W. Yorkshire.
Secondary Dry Hop 14 days.
