Alcohol: 5.9% v/v (4.6% w/w)
Water: Hollywood CA, balanced profile with 1.5 tsp gypsom in mash. strike water treated with Sodium Theosulphate, instead of boil.
Grain: 8 lb. 8 oz. American 2-row Briess
2 lb. German Lt. Munich
1 lb. Belgian biscuit
4 oz. American crystal 120L
1 lb. Dextrine malt (Cara-Pils)
2 oz. Roasted barley
Mash: 75% efficiency
154-155 F° sit overnight.
Boil: minutes SG 1.059 6 gallons
Whirlflock tablet.
Hops: 2 oz. Cascade (8.1% AA, 60 min.)
2 oz. Columbus (12.1% AA, 2 min.)
Yeast: 1 pack dry Nottingham direct pitch.
Log: Post primary firm, place in fridge for 5 days before kegging.
Carbonation: Force carb 35 to 45° over 1 week to 2.3 vols
Tasting: Delicious!
