63 HCU (~26 SRM)
Bitterness: 33 IBU
OG: 1.056 FG: 1.020
Alcohol: 4.6% v/v (3.6% w/w)
Water: SF tap water has been fine for me forever.
Grain: 6 lb. American 2-row
2 lb. American Vienna
2 lb. Belgian biscuit
8 oz. Roasted barley
8 oz. Rolled oats
8 oz. American crystal 60L
Mash: 75% efficiency
Step mash, bringing 5gal water to 163°F. Cut heat and add grains (temp now 158°F). 120 minute mash (144°F at end).
Boil: 60 minutes SG 1.047 6.5 gallons
2 oz. Cocoa powder
Cocoa powder in boil at 60 min. Whirlfloc tablets at 15 minutes.
Hops: .5 oz. Northern Brewer (8.5% AA, 45 min.)
1.5 oz. Northern Brewer (8.5% AA, 15 min.)
Yeast: Danstar Windsor Ale Dry Yeast, pitched at 90°F and oxidized with a (sanitized) whisk vigorously.
Carbonation: 2/3cup corn sugar at bottling.
