Gossamer Mandarin DIPA

A giant DIPA brewed with mandarin oranges and Falconer's Flight hops. This big orange monster is sure to please.

14 HCU (~9 SRM)
Bitterness: 127 IBU
OG: 1.090 FG: 1.018
Alcohol: 9.3% v/v (7.3% w/w)
Water: 2 Tbs gypsum in mash
Grain: 14 lb. American 2-row
1 lb. 8 oz. German Munich
12 oz. American crystal 60L
12 oz. White wheat
Mash: 75% efficiency
Single infusion at 150°F for 60 minutes. Mashout via 5 quart decoction added to 5 quarts boiling water, brought to boil and reintroduced to mash and held for 10 minutes. Continuous sparge with 170°F water to collect 8.0 gallons in the brewpot
Boil: 60 minutes SG 1.068 8.0 gallons
2 lb. Corn sugar
1 tsp rehydrated Irish moss last 15 minutes.

Peel 10 mandarin oranges ("Cuties"), add fruit to blender and pulse till well pulped. Chop peels into small pieces. Add peels last 10 minutes, pulped fruit for whirlpool.
Hops: 1 oz. Falconer's Flight (11.3% AA, 60 min.)
1 oz. Falconer's Flight (11.3% AA, 45 min.)
4 oz. Falconer's Flight (11.3% AA, 15 min.)
6 oz. Falconer's Flight (11.3% AA, 1 min.)
4 oz. Falconer's Flight (aroma)
Yeast: Safale US-05 from previous batch
Log: Dry hop 6 days once rapidly d fermentation ceases.
