Sparkling Ale

A dry, well carbiated, well hopped ale

Type: All grain Size: 2.7 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 98 IBU
OG: 1.051 FG: 1.013
Alcohol: 4.8% v/v (3.8% w/w)
Water: .5 teaspoon gypsom to med boiled tap
Grain: 4 lb. American 2-row
4 oz. Belgian aromatic
2 oz. Belgian biscuit
8 oz. Dextrine malt (Cara-Pils)
2 oz. Belgian CaraVienne
Mash: 75% efficiency
5 hours at 155°f
Boil: 75 minutes SG 1.046 3 gallons
Boil hard to clear beer. I dont use coagulation additives anymore. bottles without clarifying agents.
Hops: 1 oz. New Variety Type (12% AA, 75 min.)
1 oz. Cascade (6% AA, 10 min.)
Yeast: a little less than 1/2 pack Notty sprinkled dry
Log: Place in fridge for a few days to compact yeast after five day primary. Left flavor hops in until nifght before bottling.
Carbonation: 2.5 vols with 2.7 ounce corn sugar.
