Water: Add lactic acid to mash and sparge water to maintain ph of 5.4 to 5.6
Grain: 11 lb. American 2-row
12 oz. German Carahell
8 oz. Gambrinus Honey Malt
1 lb. German Munich
Mash: 72% efficiency
single infusion mash, 1.3 qts/lb to reach mash temp of 152. Sach rest 60 min, followed by decoction mashout to reach 168 for 10 mins. continuous fly sparge to collect 7.5 gallons to brew pot
Boil: 60 minutes SG 1.047 7.5 gallons
1 lb. Corn Sugar
irish moss last 15 minutes
Hops: 1 oz. Azacca (10.3% AA, 60 min.)
1 oz. Azacca (10.3% AA, 30 min.)
2 oz. Azacca (aroma)
Yeast: White Labs Vermont Ale yeast
Log: dry hop with 2 oz Azacca once fermentation has slowed. Dry hop for 4 days, then keg and force carbonate
