2 lb. German Vienna
10 lb. German Dark Munich
7 oz. Gambrinus Honey Malt
4 oz. Carafa II
2 lb. German Light Munich
3 oz. Acidulated Malt
Mash: 75% efficiency
154° for 60 min, decoction mash out to 170°, fly sparge with 180° water to collect 7.5 gal.
Boil: 60 minutes SG 1.062 7.5 gallons
1 tsp rehydrated Irish moss last 15 minutes
Hops: 2 oz. Hallertauer (2.75% AA, 60 min.)
1 oz. Hallertauer (2.75% AA, 15 min.)
Yeast: White Labs 820 from a prior batch
Log: Primary 50°F, D-rest at 62°F, lager at 34°F.
