40 min B amilase for ferm sugars (60-65C)
30 min a amilase non ferm sugars (70-72 C).
Mash out, sparge with 76-78 C water (1 gallon)
Boil: 60 minutes SG 1.062 4 gallons
0.5 lb. Cane sugar
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Styrian golding (5% AA, 15 min.)
Yeast: Wyeast 3724 Belgian Saison
Carbonation: 2.0 volumes Cane Sugar: 2.84 oz. for 4.7 gallons @ 22°C
