Bitterness: 127 IBU
OG: 1.094 FG: 1.015
Alcohol: 10.2% v/v (8.0% w/w)
Water: Tap water with 2 tablespoons gypsum.
Grain: 11 lb. American 2-row
7 lb. American Munich
1 lb. American crystal 60L
1 lb. Carafa II
Mash: 67% efficiency
90 minute mash at 154°F. Decoction mash out. Batch sparge.
Boil: 90 minutes SG 1.068 8 gallons
2 lb. Corn sugar
Hops listed as the two minute addition are for a 15 minute, post boil whirlpool. Aroma hops are dry hops.
Hops: 2 oz. Columbus (13.1% AA, 60 min.)
2 oz. Citra (13.6% AA, 15 min.)
2 oz. Columbus (13.1% AA, 2 min.)
1 oz. Citra (13.6% AA, 2 min.)
2 oz. Ahtanum (5.2% AA, 2 min.)
1 oz. Simcoe (12.7% AA, 2 min.)
1 oz. Amarillo (8.2% AA, 2 min.)
2 oz. Columbus (aroma)
2 oz. Citra (aroma)
1 oz. Amarillo (aroma)
Yeast: US-05 cake from prior batch
Log: Primary at 62°F till activity ceases. Secondary with oak chips for 14-21 days. Dry hop with "aroma" hops for last 7 days.
