Saison #1

My first attempt at a saison.

Beer: Saison #1 Style: Bière de Garde
Type: All grain Size: 5.5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 25 IBU
OG: 1.053 FG: 1.010
Alcohol: 5.6% v/v (4.4% w/w)
Water: Well water with nothing added.
Grain: 5 lb. British Pilsner
1 lb. Wheat malt
4 lb. German Vienna
Mash: 80% efficiency
Mash in with about 4 gallons at 165°. Should drop to about 155.
After 60 minutes begin transfer to kettle and sparge with 4 gallons at 170° until kettle is a little over 7 gallons.
Boil: 60 minutes SG 1.042 7 gallons
Add 1tsp of Irish moss in last 15 minutes
Hops: .25 oz. Galena (13.2% AA, 60 min.)
.25 oz. Belma (9.4% AA, 60 min.)
.25 oz. Galena (13.2% AA, 5 min.)
.25 oz. Belma (9.4% AA, 5 min.)
.5 oz. Galena (aroma)
.5 oz. Belma (aroma)
Yeast: Wyeast 3711 French Saison
Log: After initial fermentation settles down(5-8days) transfer to secondary and dry hop 1/2oz each of Belma & Galena hops.
