Bitterness: 28 IBU
OG: 1.068 FG: 1.015
Alcohol: 6.8% v/v (5.4% w/w)
Water: All water is Sedona tap water, softened.
Grain: 24 lb. American 2-row
1.75 lb. German crystal 80L
1.75 lb. German crystal 20L
6 oz. British chocolate
2.5 oz. Chilean black patent
2 lb. Gambrinus Honey malt
Mash: 73% efficiency
Jim, Oak Creek head brewer made nut brown wort for us to add our own twist to.


Boil: 60 minutes SG 1.057 13 gallons
Hops: 1.8 oz. Saaz Late Bohemia Hops S.A. pellet (5.5% AA, 60 min.)
1 oz. Saaz Bohemia Hops S.A.pellet (5.3% AA, 45 min.)
1 oz. Saaz Bohemia Hops S.A.pellet (5.3% AA, 15 min.)
Yeast: Oak Creek Brewing house yeast slurry. Active fermentation in 4 hours
Log: Added 6 rehydrated, in warm water, Ancho chili's & 1 pint maple syrup to end of boil. Looking for nice earthy chili flavor & maple nose. Will add more of both to taste in the secondary.
Carbonation: Will keg & force carbonate.
