Bitterness: 11 IBU
OG: 1.045 FG: 1.010
Alcohol: 4.5% v/v (3.5% w/w)
Grain: 4 lb. Belgian Pilsner
.25 lb. Dextrine malt (Cara-Pils)
3 lb. Flaked wheat
Mash: 72% efficiency
Mash at 148 for 70 mins.
Boil: minutes SG 1.039 6.0 gallons
1 lb. Belgian candi sugar
Add 1 lb Belgian Candi sugar in the last 5 minutes of the boil.
Hops: .75 oz. Hallertauer (4.25% AA, 45 min.)
Yeast: Use a good strong Belgian Wit Starter. approximately .5 Litres
Log: after flameout, add 5 lbs of raspberries. let steep for 5 minutes to pasturize. Add as many of the steeped raspberries to your fermenter as you can. Primary for 14 days and secondary for 3-4 weeks. crash cool at 34*F for 30 days and serve.
