Summer Sunshine Session

Formulated for my man Michael "down under". I'm humbled that you're using my stuff in your brewery. Cheers mate! (send me a bottle!)

Beer: Summer Sunshine Session Style: American Pale Ale
Type: All grain Size: 5.5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 45 IBU
OG: 1.041 FG: 1.010
Alcohol: 4.0% v/v (3.1% w/w)
Water: Tapwater with 1 TBS gypsum added
Grain: 6 lb. 4 oz. American 2-row
1 lb. American Munich
9 oz. American crystal 20L
8 oz. White Wheat Malt
Mash: 75% efficiency
153°F for 60 minutes. 1 gallon decoction added to 1 gallon boiling water. Bring decoction to boil and reintroduce to the mash to mash out at 165°F for 10 minutes. Continuously sparge with 170°F water to collect 7.5 gallons in the brewpot.
Boil: 60 minutes SG 1.030 7.5 gallons
At the end of the boil, add aroma hops and whirlpool for 10-15 minutes before chilling the wort.
Hops: .5 oz. Magnum (12% AA, 60 min.)
2 oz. Australian Galaxy (12% AA, 5 min.)
1 oz. Australian Galaxy (aroma)
3 oz. Australian Summer (aroma)
Yeast: WLP051 (California V) in a 2000 ml starter.
Log: Hold at 67°F for 4-5 days. Hold 2 additional days at fermentation temp for diacetyl rest before cooling to 50°F. Rack to secondary. Dry hop with 2 oz Summer, 1 oz Galaxy for 10 days at 50°F. Allow temp to rise to 60°F. Rouse hops with CO2 at days 2, 5 and 8. Rack to tertiary fermenter at day 9. Cool for two days at 40°F and finally cool to 33°F.
Carbonation: 2.0 volumes Keg: 6.8 psi @ 40°F
