Fatboy IPA

This is the Fatheads Headhunter IPA recipe from Mitch Steele's IPA book, converted to an extract recipe for a friend.

Beer: Fatboy IPA Style: India Pale Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 86 IBU
OG: 1.067 FG: 1.014
Alcohol: 6.9% v/v (5.4% w/w)
Water: Add 1 teaspoon gypsum to steep water, and 1 tablespoon to brewpot.
Grain: 13 oz. American crystal 40L
5 oz. Dextrine malt (Cara-Pils)
13 oz. Carahell
13 oz. Toasted Flaked wheat
Steep: Toast flaked wheat on cookie sheets at 350°, turning every couple minutes until it has a nice toasty smell and begins to brown a bit. Steep all specialty grains in muslin bags immersed in 2 gallons 155° water for 30 minutes. Remove grain bag, rinse with additional 1 gallon 155° water to collect 3 gallons into brewpot.
Boil: 90 minutes SG 1.049 7.5 gallons
7 lb. Briess Light DME
8 oz. Corn sugar
Add additional 4 to 4.5 gallons to brewpot. Total boil time is 90 minutes. Hop additions per schedule in spreadsheet. Add corn sugar at flameout. Cool to 67°F and pitch yeast.
Hops: .75 oz. Columbus (17.7% AA, 90 min.)
.25 oz. Citra (12.4% AA, 45 min.)
.25 oz. Centennial (9.2% AA, 45 min.)
.25 oz. Citra (12.4% AA, 30 min.)
.25 oz. Centennial (9.2% AA, 30 min.)
.25 oz. Columbus (17.7% AA, 1 min.)
.5 oz. Centennial (9.2% AA, 1 min.)
2 oz. Simcoe (12.2% AA, 1 min.)
1 oz. Columbus (aroma)
1 oz. Citra (aroma)
1 oz. Centennial (aroma)
1 oz. Simcoe (aroma)
Yeast: 1 packet of Safale US-05, pitched directly onto cooled wort.
Log: Hold at 67°F for 7 days. Rack to secondary fermenter and dry hop for 10 days. Rouse dry hops by stirring on days 2, 5 and 8. Rack to tertiary fermenter and allow hops to settle out.
Carbonation: 2.0 volumes Keg: 6.8 psi @ 40°F
Corn Sugar: 3.32 oz. for 5.5 gallons @ 67°F
