Pilon-Seeya Double IPA

An aggressive Double IPA with a Mexican twist -- large additions of piloncillo, harvested directly in Central Mexico.

22 HCU (~12 SRM)
Bitterness: 98 IBU
OG: 1.091 FG: 1.013
Alcohol: 10.0% v/v (7.9% w/w)
Water: Filtered water -- 5 gallon container.
Grain: 25g Wheat malt
100g American crystal 20L
25g Belgian Special B
25g Honey Malt
Steep: Steep grains in a muslin bag in 2 gallons of water at 152 degrees for 45 minutes.
Boil: 60 minutes SG 1.073 6.2 gallons
4.2kg Piloncillo (unfiltered cane sugar)
.25kg Honey
No finings used until brought into secondary. Add one packet of unflavored gelatin mix to clarify for three days at low temps. Then rack for bottling.
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
1 oz. Chinook (12% AA, 60 min.)
.5 oz. Cascade (6% AA, 45 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Centennial (10.5% AA, 15 min.)
2 oz. Centennial (aroma)
1 oz. Galaxy (aroma)
Yeast: Safale-05 yeast packet.
Carbonation: 4oz of Piloncillo to carbonate.
