This is a clean out the brewery beer.

Bitterness: 74 IBU
OG: 1.060 FG: 1.015
Alcohol: 5.8% v/v (4.5% w/w)
Water: All water is RO w/ 1 Tbl. Brewing Salts.
Grain: 20 lb. Belgian pale
3 lb. Briess White Wheat malt
3 lb. Weyermann CaraMunich Type 2
5 lb. Flaked barley
Mash: 70% efficiency
Heat water to 165°F to mash in at 150°-153°F until conversion is complete.
Boil: 60 minutes SG 1.056 14 gallons
1 Tbl. Irish Moss last 15 min. of boil.
Hops: 3 oz. Summit (whole) (15% AA, 60 min.)
1 oz. Triple Perle (Whole) (10.3% AA, 45 min.)
.5 oz. Tahoma (whole) (6.2% AA, 30 min.)
.5 oz. Tahoma (whole) (6.2% AA, 15 min.)
Yeast: 1000 ml. starter of Wyeast 2278 Czech Pilsner & Wyeast 2001 Urquell Lager Yeast blend from Big Bo Pils slurry.
Carbonation: 2.0 volumes Keg: 5.1 psi @ 36°F
