Type: All grain Size: 5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 50 IBU
OG: 1.062 FG: 1.016
Alcohol: 5.9% v/v (4.7% w/w)
Water: 1 tsp Gypsum and 1 tsp CaCl2 added to sparge water.
Grain: 9 lb. 8 oz. British pale
6 oz. Wheat malt
12 oz. American crystal 40L
6 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Mash at 152 degrees F for 60 minutes. Mash out for 10 minutes at 168 degrees F.
Boil: 60 minutes SG 1.048 6.5 gallons
1 tsp Irish Moss added with 20 minutes left in the boil.
Hops: 1.25 oz. Centennial (8.7% AA, 60 min.)
0.4 oz. Mosaic (11.6% AA, 15 min.)
0.25 oz. Centennial (8.7% AA, 15 min.)
1.6 oz. Mosaic (aroma)
0.5 oz. Centennial (aroma)
Yeast: WLP 002 yeast cake from prior stout batch.
Log: Ferment at 62-64 degrees F for one week. Secondary for one week at 62-64 degrees F. Aroma hops added as dry hops in secondary.
Carbonation: Keg and pressurize to 2.5 volumes of CO2.
