Big Bo Pils 2014

Trying to push the envelope on my Pils receipe & use up some of the grain I have. Brewed 12/26/14

Type: All grain Size: 12 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 45 IBU
OG: 1.066 FG: 1.014
Alcohol: 6.7% v/v (5.2% w/w)
Water: All water is RO.
Grain: 10 lb. Belgian pale
18 lb. Belgian Pilsner
.5 lb. Weyermann CaraMunich Type 2
Mash: 75% efficiency
Mash in with 165°F water to rest at 155°F 30 min. Pull big decoction to another pot to boil for 10 min. & return to mash. Raise to 170°F & hold for 10 min. then sparge w/ 175°F hot liquor.
Boil: 90 minutes SG 1.056 14 gallons
Add 1 Tbs. Irish Moss last 15 min of boil.
Hops: 5 oz. Hallertauer (4% AA, 60 min.)
2 oz. Saaz (4% AA, 70 min.)
1 oz. Saaz (4% AA, 30 min.)
1 oz. Saaz (4% AA, 15 min.)
Yeast: 2000 ml. starter of Wyeast 2278 Czech Pilsner yeast.
Log: Frement at 50-55°F to FG of 1.014 then raise to 65°F for diacetyl rest for 2 days. Lauger at 34°F for 60-90 days.
Carbonation: Carbonate in Corney kegs.
