Type: Extract w/grain Size: 5.5 gallons
Color:
102 HCU (~36 SRM)
Bitterness: 40 IBU
OG: 1.054 FG: 1.014
Alcohol: 5.1% v/v (4.0% w/w)
Water: Easier to rehydrate dme in 120F water than at/near boiling. Make sure nothing sticks to the bottom of the brew pot.
Grain: .5 lb. Crystal 60L
.75 lb. Chocolate malt / carafa II
.25 lb. Black patent / carafa III /roasted barley
Steep: Steep in enough 150F water to cover the grain plus 2-3 inches, then rinse grains in same amount of new hot water (not over 170F).
Boil: 60 minutes SG 1.042 7 gallons
6 lb. Light dry malt extract
I wouldnt bother with Irish moss, you're not going to see through it anyway.
Hops: .75 oz. Nugget/Columbus/magnum etc. (12% AA, 60 min.)
1 oz. Cascade/Amarillo/Centennial/Northern Brewer (6% AA, 15 min.)
Yeast: US-05
Log: Variety of hops don't matter much as they aren't the focus. You can recalculate the weight of the hops needed based on the AA% of the hops you get while keeping to 40ibus.
