July4th Pilsner

This is a single malt, single hop all grain recipe based on the Bohemian pilsener style. Batch size 5 gal.

4 HCU (~4 SRM)
Bitterness: 38 IBU
OG: 1.051 FG: 1.017
Alcohol: 4.4% v/v (3.4% w/w)
Water: Per-boiled and chilled 2 gal H20
Grain: 12 lb. American 2-row
Mash: 60% efficiency
Steeped 12lb American 2 row at 173° for 90 min. First runnings one gal out and returned to mash. Temp 154°. Sparged w/5 gal at 170°, let rest
15min and drained to boil pot. Boil volume 6.5 gal.
Boil: 90 minutes SG 1.041 6.5 gallons
Added 1oz Saaz hops and tsp gypsum at hot break. Second oz of Saaz at
30 min, and third oz of Saaz last 30 min. plus tsp Irish moss.
Hops: 1.00 oz. Saaz (4.2% AA, 90 min.)
1.00 oz. Saaz (4.2% AA, 60 min.)
1.00 oz. Saaz (4.2% AA, 30 min.)
Yeast: Pitched 1 qt. yeast starter (made day before). Wyeast 2007 Pilsen
lager yeast.
Log: Brewed May 29th, 2014. Fermented in glass at 64° for one day, then packed in ice to bring temp to 58°, then 52° for 5 days. Racked to
secondary and refrigerated at 40° for 6 days, then racked to corny
keg and back to refrigerator for lagering. Carbonation on 7/1.
Carbonation: Lagered for 24 days at 40°. Carbonated at 10 psi. Drinkable in 3 days.
Tasting: Color, pale golden; creamy white head with good retention. Crisp, malty
mouth feel with good, spicy hop bitterness. Overall, crisp and
refreshing for hot July days! Very happy with results.
