Belgian wheat ale with apricots

Another fun split beer experiment. A 10 gallon batch of non-traditional Belgian wit, half fermented as-is with WLP550 and he other half fermented with WLP500 and aged on 10 lbs of frozen overripe apricots.

10 HCU (~7 SRM)
Bitterness: 31 IBU
OG: 1.055 FG: 1.008
Alcohol: 6.1% v/v (4.8% w/w)
Water: 80% RO, 20% tap.
Grain: 2.5 lb. German light munich
2.5 lb. Belgian aromatic
16.0 lb. Wheat malt
Mash: 85% efficiency
1.25 qt/lb. Mash at 150 for 60 minutes, 10 minute decoction mash out.
Boil: 60 minutes SG 1.047 14 gallons
Fresh zest of 4 oranges and 1 oz cracked coriander steeped for 5 minutes post boil during whirlpool cool-down, then CFC routed back to the fermentors.
Hops: 1.26 oz. Northern Brewer (8.9% AA, 90 min.)
1.89 oz. Saaz (2% AA, 90 min.)
3.14 oz. Saaz (2% AA, 15 min.)
Yeast: WLP550 and WLP500, separate fermentors.
Log: WLP500 half racked on 10 lbs of organic overripe apricots (from my mom's tree!) and aged there for a month before kegging.
Carbonation: 2.5 volumes Keg: 12.3 psi @ 40°F
