Alcohol: 8.0% v/v (6.3% w/w)
Water: All spring water.
Grain: 13 lb. 8 oz. American 2-row
8 oz. American crystal 90L
1 lb. Dextrine malt (Cara-Pils)
1 lb. American chocolate
1 lb. 4 oz. Roasted barley
1 lb. 4 oz. Melanoiden
Mash: 70% efficiency
Light/base grains are kept separate from the caramel & dark grains.
Mash base grains in 20 quarts of water for 25 minutes @ 159°F.
Mix in the caramel & dark grains and hold for another 8 minutes.
Begin Mash Out routine.
Boil: 60 minutes SG 1.071 6.5 gallons
1 tablet Whirlfloc at 15 minutes left in boil.
Hops: 1 oz. Nugget (12% AA, 45 min.)
Yeast: Lallamond Nottingham dry yeast.
Log: Primary ferment for 1 week. Secondary for another week.
