Tree Peeker IBA

A nice big brown beast of an ale, packed full of Northwest hops. Drink too many of these, and you'll be throwing rocks and banging sticks together in the middle of the night.

Bitterness: 95 IBU
OG: 1.066 FG: 1.014
Alcohol: 6.7% v/v (5.3% w/w)
Water: Tapwater with 1 Tbs 5.2 Stabilizer and 1 Tbs gypsum added to mash.
Grain: 10 lb. American 2-row
8 oz. American crystal 60L
4 oz. Dextrine malt (Cara-Pils)
4 oz. Belgian Special B
7 oz. Flaked oats
2 oz. Carafa III
Mash: 80% efficiency
Single infusion at 155°F for 60 minutes. Mashout via 3 quart decoction added to 5 quarts boiling water, brought to boil and reintroduced to mash and held for 10 minutes. Continuous sparge with 170°F water to collect 7.8 gallons in the brewpot (extra volume to account for liquid loss in hop trub).
Boil: 60 minutes SG 1.049 7.5 gallons
12 oz. Corn sugar
Add dextrose at start of boil
Hops: 1 oz. Simcoe (12.7% AA, 60 min.)
1 oz. Nugget (13.5% AA, 10 min.)
1 oz. Simcoe (12.7% AA, 5 min.)
2 oz. Cascade (9.5% AA, 5 min.)
1 oz. Mosaic (11.6% AA, 5 min.)
1 oz. Citra (13.9% AA, 1 min.)
1 oz. Amarillo (9.3% AA, 1 min.)
1 oz. Nugget (aroma)
1 oz. Mosaic (aroma)
1 oz. Amarillo (aroma)
Yeast: Safale S-05
Log: Log: Ferment at 62°F. 7-10 days primary, 14 days secondary (with 3 oz dry hops)
