All Day Pale Ale III

Inspired by Green Flash's Session IPA and Uintah Brewing's Wyld, this is a low alcohol/calorie beer with a noticeable hop character.

Type: Extract w/grain Size: 5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 51 IBU
OG: 1.040 FG: 1.012
Alcohol: 3.6% v/v (2.9% w/w)
Water: Tap water
Grain: 4 oz. American crystal 40L
4 oz. American crystal 60L
4 oz. American crystal 80L
Steep: Place grains in a hop bag, toss in when the burner is lit, remove when water reaches boil.
Boil: 60 minutes SG 1.081 2.5 gallons
3 lb. Light malt extract
1 lb. Amber malt extract
1 lb. Light dry malt extract
Small amount of irish moss added with the final hop addition.
Hops: .5 oz. Chinook (14.2% AA, 60 min.)
1 oz. Chinook (14.2% AA, 25 min.)
.5 oz. Chinook (14.2% AA, 10 min.)
Yeast: 1056, 1028, or whatever you like.
Carbonation: Force carb in keg.
Tasting: Third attempt at this beer. First time around was too Amber-ish, second attempt was close significantly lighter and nicely hopped. Hoping to split the difference and nail it here on the third try.
