Cooper's Sparkling clone

Hops based on Pride of Ringwood being THE Australian bittering hop and read somewhere that Cascade used to be mentioned on the Cooper's kit can!

Bitterness: 36 IBU
OG: 1.057 FG: 1.012
Alcohol: 5.8% v/v (4.5% w/w)
Boil: 60 minutes SG 1.130 10 liters
1.5kg Light malt extract
1.7kg Amber malt extract
500g Light dry malt extract
0g Cane sugar
400g Corn sugar
Whirl-floc 10-5 minutes
Hops: 50g Pride of Ringwood (8% AA, 60 min.)
33g Pride of Ringwood (8% AA, 30 min.)
25g Cascade (6% AA, 15 min.)
25g Cascade (aroma)
Yeast: Cooper's Ale Yeast, harvest from a six-pack or buy. This yeast is a beast, if you're wondering at the FG - I've just had an IPA get to 1.016 from an OG of 1.067 with it.
Log: 21-24 deg C, although the Cooper's yeast will still perform happily up to 26, which is great when brewing in summer.
Carbonation: I'm lazy, 2x carbonation drops / 740ml
