A very bold smoked Canadian whiskey maple porter, brewed for Trout Camp 2014.

Alcohol: 6.4% v/v (5.0% w/w)
Water: 1 tsp Gypsum
1 Tbs 5.2 Mash pH Stabilizer
Grain: 8 lb. American 2-row
8 oz. American crystal 60L
8 oz. Belgian Special B
8 oz. American chocolate
4 oz. American black patent
2 lb. Smoked 2-row
Mash: 75% efficiency
Single infusion mash at 154F. Fly sparge with 175F water to collect 7.5 gallons in brewpot.
Boil: 60 minutes SG 1.047 7.5 gallons
17 oz. Pure Canadian Maple Syrup
Hops: 1 oz. Centennial (8.7% AA, 60 min.)
.5 oz. Cascade (7.1% AA, 15 min.)
.5 oz. Cascade (7.1% AA, 5 min.)
Yeast: Safale US-05 cake from a previous batch.
Log: On brew day soak 4 oz oak chips in 2 oz Crown Royal Canadian whiskey. Primary Fermentation: 7 days @ 66F

Rack to secondary fermenter on top of oak chips and whiskey.
Secondary Fermentation: 21 days @ 66F
Carbonation: 2.2 volumes Keg: 9.0 psi @ 40°F
