Cereal City Nut Brown

An easy extract+grain recipe for a tasteful brown ale.

24 HCU (~13 SRM)
Bitterness: 20 IBU
OG: 1.054 FG: 1.012
Alcohol: 5.4% v/v (4.3% w/w)
Grain: 3 oz. American crystal 60L
5 oz. Pale chocolate
0 oz. Roasted barley
Steep: 2 gal steep 160 F, grain in a muslin bag
Boil: 60 minutes SG 1.081 4 gallons
8 lb. Light malt extract
8 oz. Brown sugar
Whirlfloc 15 min. before flameout.
I had 3 boilovers and lots of evaporation due to cold weather. Added about 1/2 galon during boil
Hops: 0.8 oz. UK First Gold (8.9% AA, 60 min.)
0.5 oz. Styrian Goldings (3.2% AA, 30 min.)
0.5 oz. Styrian Goldings (3.2% AA, 15 min.)
1 oz. Styrian Goldings (aroma)
Yeast: Safale 04, 1 envelope
Log: density in the boil: 1082
density in fermentor after adding 2 gal of water: 1045 on top and 1080 from a sample from bottom. It was stratified.
Pitch temperature: 60F @ 5 PM
First night: 72 F @ 11 PM. It was bubbling very fast.
First day: 69 . Still bubbling every second.
Carbonation: 2.3 volumes Keg: 10.1 psi @ 40°F
First 72 hrs. @ 20 PSI, then 10 PSI. I
