Faths Cream Ale

Very simple recipe with outstanding results. The cane sugar amount is variable, primarily used to hit the OG you are looking for without adding any body to the beer. This is a great "lawnmower beer".

Type: All grain Size: 6 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 25 IBU
OG: 1.050 FG: 1.007
Alcohol: 5.5% v/v (4.3% w/w)
Water: My water is very soft, so I do not adjust it at all for most light colored beers.
Grain: 6 lb. American 6-row
3 lb. German Pilsner
1 lb. Dextrine malt (Cara-Pils)
1 lb. Flaked corn
Mash: 75% efficiency
Single infusion mash at 153 F.
Boil: 60 minutes SG 1.043 7 gallons
Add Irish Moss at 10 minutes left in the boil.
Hops: 1 oz. Liberty (4% AA, 60 min.)
1 oz. Liberty (4% AA, 30 min.)
.5 oz. Liberty (4% AA, 15 min.)
.5 oz. Liberty (aroma)
Yeast: WY-1056 or equivalent.
Log: Ferment on the low end to keep the flavor clean. I try to keep it at around 60F for most of the fermentation, then let it rise to around 65 to try and squeeze the last bit of alcohol out of the sugars.
Tasting: I have shown the recipe with all Liberty hops, but I have sometimes used higher alpha hops to bitter with so that I could use less hops, and saved the Liberty hops for the later additions.
