Perihelion Pale Ale

Brewed January 4th, 2014 - Perihelion! Today it's cold as hell out, so you'd never guess that Mother Earth is at her closest point to the sun of the year... Oh the irony.

Type: All grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 81 IBU
OG: 1.068 FG: 1.013
Alcohol: 7.1% v/v (5.6% w/w)
Water: 1 tbs 5.2 stabilizer, 2 tsp gypsum
Grain: 11 lb. American 2-row
1 lb. German Munich
3 oz. Gambrinus Honey Malt
5 oz. American crystal 60L
4 oz. Belgian CaraMunich
Mash: 80% efficiency
60 min at 152°, decoction mash out at 160°. Sparge with 170° water to collect 7.5 gal in brew pot.
Boil: 60 minutes SG 1.068 5.5 gallons
Hop blast blend is:
2 oz Columbus (16.3% AA)
2 oz Citra (13.9% AA)
1 oz Simcoe (12.2% AA)
1 oz Centennial (8.7% AA)
Hops: 1 oz. Simcoe (12.2% AA, 60 min.)
2 oz. Hop Blast Mix (13.6% AA, 10 min.)
2 oz. Hop Blast Mix (13.6% AA, 5 min.)
2 oz. Hop Blast Mix (aroma)
Yeast: Safale US-05.
Log: 14 days primary at 62°. Rack to keg, serve fresh.
Carbonation: 2.0 volumes Keg: 6.8 psi @ 40°F
