Wintry Mix

A festively spiced winter wassail, brewed for Christmas with the whole family at my moms house.

Beer: Wintry Mix Style: English Old/Strong Ale
Type: All grain Size: 5.5 gallons
Color:
27 HCU (~14 SRM)
Bitterness: 31 IBU
OG: 1.074 FG: 1.014
Alcohol: 7.8% v/v (6.1% w/w)
Water: 1 Tbs 5.2
Grain: 10 lb. American 2-row
2 oz. Belgian aromatic
1 lb. American crystal 60L
2 oz. American chocolate
4 oz. Special Roast
Mash: 75% efficiency
60 minutes at 152°F. Pull a 1 gallon decoction and add to 1 gallon boiling water, reintroduce to mash to mash out at 160°F. Sparge with 170° water to collect 7.5 gallons in brew pot.
Boil: 60 minutes SG 1.054 7.5 gallons
12 oz. Brown sugar
12 oz. Honey
12 oz. Molasses
Add honey, molasses, brown sugar and the following spices just before flame out:

3 cinnamon sticks
1/2 tsp ground ginger
1/4 cup pure vanilla extract
Hops: 1 oz. Amarillo (9.3% AA, 60 min.)
Yeast: Danstar Nottingham
Log: Ferment 14 days at 65° F. Cold crash for two days at 40° F. Keg, and force carbonate. Serve immediately.
