Singletrack IPA - v7.0 - Mosaic

A new series of American India Pale Ale at the Doghaus. This is a rotating Single Hopped IPA, each batch having the same grain bill and yeast, but each with a different hops selection (always scaled to be between 70 and 90 IBU's).

Type: All grain Size: 5.5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 74 IBU
OG: 1.068 FG: 1.014
Alcohol: 6.9% v/v (5.4% w/w)
Water: Tap water with 1 Tablespoon 5.2 Mash Stabilizer, 2 teaspoons gypsum.
Grain: 11 lb. American 2-row
1 lb. American Munich
12 oz. American crystal 60L
Mash: 80% efficiency
153°F for 60 minutes. 1 gallon decoction added to 1 gallon boiling water. Bring decoction to boil and reintroduce to the mash to mash out at 165°F for 10 minutes. Continuously sparge with 170°F water to collect 7.5 gallons in the brewpot.
Boil: 60 minutes SG 1.050 7.5 gallons
Hops: 1 oz. Mosaic (12% AA, 60 min.)
1 oz. Mosaic (12% AA, 15 min.)
1 oz. Mosaic (12% AA, 5 min.)
1 oz. Mosaic (12% AA, 2 min.)
1 oz. Mosaic (aroma)
Yeast: Safale US-05
Log: Primary fermentation at 65°F for 7-10 days. Rack to secondary and dry hop with 1 oz Mosaic hops for 7 days. Keg and force carbonate. Serve fresh.
