This is a replica of an IPA based on an English Recipe from 1800.

Alcohol: 9.1% v/v (7.1% w/w)
Water: 9 gallons spring water
Grain: 13 lb. British pale (Maris Otter)
Mash: 72% efficiency
60 minutes at 154°
Boil: 65 minutes SG 1.050 8 gallons
1 lb. Belgian candi sugar
Added the 1 lb. Clear Candy Sugar at 60 minutes. Added 1 Whirlfloc tablet at 10 minutes.
Hops: 2.5 oz. Kent Goldings (5% AA, 60 min.)
7 oz. Fuggles (4.75% AA, 15 min.)
3.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: 2 vials White Labs WLP002
(A classic ESB strain from one of England's largest breweries. This yeast is best suited for English
style ales including milds, bitters, porters, and English style stouts. This yeast will leave a beer very
clear, and will leave some residual sweetness.)
Carbonation: Bottled with 5 oz. Corn Sugar
