Jacko's Pumpkin Ale

Type: Extract w/grain Size: 5 gallons
Color:
18 HCU (~11 SRM)
Bitterness: 12 IBU
OG: 1.055 FG: 1.010
Alcohol: 5.8% v/v (4.6% w/w)
Water: Local grocery store's spring water
Grain: 8 oz. Wheat malt
8 oz. American crystal 20L
Steep: I heat my water to 160°, add the grains and place the pot into my preheated oven for 30 minutes. Steep the grains along with 45oz of canned pumpkin (not pumpkin pie filling).
Boil: 60 minutes SG 1.110 2.5 gallons
3.8 lb. Light dry malt extract
1.9 lb. Amber dry malt extract
4.0 oz. Brown sugar
Round up your extract amounts. I'm accounting for the amount that always sticks to the bags.
Add 1 tsp of Irish Moss with 15 minutes remaining.
Add 1 tbls of vanilla, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice and 1/4 tsp ginger at end of boil.
Hops: 1.00 oz. Cascade (5% AA, 60 min.)
0.5 oz. Liberty (4% AA, 15 min.)
.5 oz. Liberty (aroma)
Yeast: Whites Lab California Ale WLP001
Log: Primed with 4.25oz of brown sugar
Updated amounts to account for loss during extract addition. Equaled gravity reading at racking.
Added another 1 tbls of vanilla, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice and 1/4 tsp ginger just before bottling.
Tasting: Tasted at racking after 1 week. Rather bitter and not impressed with spice.
Not bad for a 1st attempt. Could use a little more of everything (spices and pumpkin).
Enjoyed a bottle 1 month later. Not sure I need to add more spices. Yum!
