Hulk SMaSH

My LHBS had Cascade hops by the pound at a ridiculously low price and I've always wanted to do a big green and angry SMaSH beer.

I dunno, maybe I will, David... Maybe I will.

Brewer: Chris Ungvarsky Email: chris.ungvarsky@gmail.com
Beer: Hulk SMaSH Style: American Pale Ale
Type: All grain Size: 5.5 gallons
Color:
18 HCU (~11 SRM)
Bitterness: 91 IBU
OG: 1.076 FG: 1.010
Alcohol: 8.5% v/v (6.7% w/w)
Water: Tapwater with 1 Tbs 5.2 stabilizer, 1 Tbs gypsum.
Grain: 13 lb. Briess American 2-row
2 lb. Toasted Briess American 2-row
Mash: 75% efficiency
Spread 2 pounds of uncracked 2 row onto cookie sheets and roast at 400°F for 10-20 minutes, mixing and stirring every couple minutes to avoid burning. When the grain takes on a golden brown hue and begins to smell "toasty", pull it out.

Single infusion at 153°F for 60 minutes. Mashout via 1 gallon decoction added to 1 gallon boiling water, brought to boil and reintroduced to mash and held for 10 minutes. Continuous sparge with 170°F water to collect 7.5 gallons in the brewpot.
Boil: 60 minutes SG 1.056 7.5 gallons
Hops: 2 oz. Cascade (7.1% AA, 60 min.)
2 oz. Cascade (7.1% AA, 15 min.)
2 oz. Cascade (7.1% AA, 10 min.)
2 oz. Cascade (7.1% AA, 2 min.)
2 oz. Cascade (aroma)
Yeast: Safale US-05 from a previous batch.
Carbonation: 2.5 volumes Keg: 12.3 psi @ 40°F
Tasting: I know that using the toasted malt kind of moves this recipe away from a true SMaSH beer (Single Malt and Single Hop), but with the high gravity and IBU's, I wanted just a little toastiness to balance. Don't judge.
