43 HCU (~20 SRM)
Bitterness: 88 IBU
OG: 1.055 FG: 1.012
Alcohol: 5.6% v/v (4.4% w/w)
Water: 1 tsp gypsum, 1 TBS 5.2 Mash Stabilizer
Grain: 8 lb. American 2-row
4 oz. American Special Roast
8 oz. American crystal 90L
4 oz. Dextrine malt (Cara-Pils)
4 oz. American chocolate
2 oz. American black patent
Mash: 80% efficiency
1.3 qt per pound at 153F for 60 minutes. 1 gallon decoction added to 1 gallon boiling water, reintroduce to mash for mash out. Sparge with 170F water to collect 7.5 gal in brewpot.
Boil: 60 minutes SG 1.040 7.5 gallons
8 oz. Brown sugar
4 oz. Molasses
Hops: 1 oz. Simcoe (12.2% AA, 60 min.)
.5 oz. Mt. Hood (6.1% AA, 60 min.)
1 oz. Nugget (13.3% AA, 15 min.)
.5 oz. Mt. Hood (6.1% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Safale US-05
Carbonation: 2.0 volumes Keg: 6.8 psi @ 40°F
