Beer: When the Cat's Away IPA Style: India Pale Ale
Type: All grain Size: 5.5 gallons
Color:
17 HCU (~10 SRM)
Bitterness: 74 IBU
OG: 1.067 FG: 1.014
Alcohol: 6.8% v/v (5.3% w/w)
Water: 2 tsp gypsum, 1 tbs 5.2 Stabilizer in mash.
Grain: 11 lb. American 2-row
4 oz. Gambrinus Honey Malt
1 lb. American crystal 60L
4 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
153°F for 60 minutes. 1 gallon decoction added to 1 gallon boiling water, brought to boil and reintroduced to mash for mashout. Sparge with 170°F water to collect 7.5 gallons in the brewpot.
Boil: 60 minutes SG 1.049 7.5 gallons
8 oz. Brown sugar
Add brown sugar with 2 minutes left in boil.
Hops: 1 oz. Cascade (7.3% AA, 60 min.)
.5 oz. Columbus (13.9% AA, 60 min.)
1 oz. Cascade (7.3% AA, 15 min.)
.5 oz. Columbus (13.9% AA, 15 min.)
1 oz. Citra (whole leaf) (aroma)
Yeast: Safale S-05 from a prior batch/
Log: Primary at 65°F for 21 days. Rack to keg and place Citra dry hops in a weighted muslin bag suspended by monofilament line.
Carbonation: Keg and force carbonate.
