Alcohol: 5.1% v/v (4.0% w/w)
Grain: 10.3 lb. German Pilsner
10.3 lb. Wheat malt
Mash: 75% efficiency
mash in around 152-154 for at least 90 minutes
Boil: 90 minutes SG 1.049 12 gallons
about 1oz crushed Coriander, bitter orange peel and a little bit of grains of paradise for the last 15 minutes.
Hops: 2.5 oz. Saaz (3.75% AA, 60 min.)
.5 oz. Saaz (aroma)
Yeast: Safbrew S-33 belgian yeast.
Log: added about a 1/2oz of crushed coriander directly to primary.

primaried for 9 days, then racked directly to keg.
Carbonation: 25# of pressure overnight after kegging, then off for 2 hours (while carbonating 2 other kegs) and back on again for an hour during the day.
Tasting: tasted great while racking, we'll see what carbonation does...
