Bitterness: 28 IBU
OG: 1.052 FG: 1.016
Alcohol: 4.6% v/v (3.6% w/w)
Water: Naperville tap.
1 tsp gypsum added to sparge water.
Grain: 5 lb. American 2-row
10 oz. Roasted barley
.5 lb. Flaked barley
Mash: 80% efficiency
152F-60 min
Mashout-10 min
Boil: 60 minutes SG 1.043 4.25 gallons
2.5 oz. Cane sugar
Hops: 1 oz. Willamette (4.8% AA, 60 min.)
Yeast: S-04 added directly to wort.
Log: 1/29/12-brewed.
2/3/12-bottled.
Carbonation: .55 cup sugar disolved in 1 cup boiling water.
Tasting: Tasted great at bottling time.
2/21/12-This is great beer! Carbonation seems right and I didn't mess with the recipe by adding soured wort or vinegar to mimic a Guinness like twang. I first sampled after 10 days and it was good then but cold conditioning has helped.

3/2/12-Even better than before. There was some DMS but its gone now. Amazing! I'm proud of this one. However, I wouldn't count on 90% attenuation every time.
