Alcohol: 7.5% v/v (5.9% w/w)
Water: 1 tbs 5.2 stabilizer, 2 tsp gypsum
Grain: 9 lb. 8 oz. American 2-row
3 lb. 12 oz. American Vienna
2 lb. 8 oz. American Munich
Mash: 70% efficiency
Single infusion mash at 152°F for 60 minutes (strike with 1.3 quarts 166°F water per pound of grain). Continuous sparge with 175°F water to collect 7.5 gallons in brewpot.
Boil: 90 minutes SG 1.053 7.5 gallons
Hops: 1.25 oz. Nugget (13% AA, 90 min.)
.5 oz. Columbus (15% AA, 20 min.)
.75 oz. Palisade (9% AA, 10 min.)
1 oz. Nugget (13% AA, 1 min.)
1 oz. Columbus (15% AA, 1 min.)
1.5 oz. Simcoe (14% AA, 1 min.)
