OG: 1.060 FG: 1.015
Alcohol: 5.8% v/v (4.6% w/w)
Water: All water is RO.
Grain: 27 lb. Dingemans Belgian Pilsner
1 lb. Best Malz German Munich
1 lb. Dingemans Belgian aromatic
Mash: 73% efficiency
Mash in at 165°F to rest at 155°F for 1 hour, then pull large decoction to another pot. Bring decoction up to a boil & hold for 15 min. Add back to bring temp. up to 170°F & hold for 10 min. then sparge.
Boil: 90 minutes SG 1.056 14 gallons
1 Tablespoon Irish Moss last 15 min. of boil.
Hops: 5 oz. US Hallertauer (whole) (4% AA, 90 min.)
1 oz. US Hallertauer (whole) (4% AA, 70 min.)
1 oz. US Hallertauer (whole) (4% AA, 30 min.)
2 oz. US Hallertauer (whole) (4% AA, 15 min.)
1 oz. US Hallertauer (whole) (aroma)
Yeast: 1000 ml. starter of Wyeast 2278 Czech Pilsner.
Log: Ferment at 50-55°F until FG of 1.015, warm to diacetyl rest for 2 days, then lager at 34°F for 90 days. Going for a big malty, smooth bitterness Pils.
Carbonation: Carbonate in Corney's.
