8 oz. Gambrinus Honey Malt
8 oz. American crystal 80L
1 oz. American chocolate
Mash: 75% efficiency
150°F for 60 minutes. Pull 1 gallon decoction, add to 1 gallon boiling water, bring to boil, reintroduce to mash. Add 1 oz Glacier to brewpot (first wort hop) and continuously sparge with 170°F water to collect 7.5 gallons in brewpot.
Boil: 60 minutes SG 1.067 7.5 gallons
1 lb. 8 oz. Corn sugar
Add 1 oz. Glacier at flameout.
Hops: 1 oz. Hersbrucker (4.5% AA, 60 min.)
1.5 oz. Glacier (5.5% AA, 60 min.)
1 oz. Centennial (10.5% AA, 30 min.)
1 oz. Hersbrucker (4.5% AA, 20 min.)
1 oz. Glacier (5.5% AA, 20 min.)
1 oz. Amarillo (9% AA, 20 min.)
1 oz. Glacier (aroma)
1 oz. Amarillo (aroma)
3 oz. Simcoe (aroma)
Yeast: 2 packages Safale US-05
Log: Primary at 66°F for 10 days. Dry hop with 1 oz. Amarillo and 3 oz. Simcoe in secondary for 10 days.
Carbonation: Keg and force carbonate.
