Beer: Mama's Favorite IPA Style: India Pale Ale
Type: Partial mash Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 82 IBU
OG: 1.072 FG: 1.022
Alcohol: 6.4% v/v (5.1% w/w)
Water: Used purchased water.
To boil pot add 1 tsp CaCl2 (calcium chloride), 1 tsp Gypsum and
1 tsp NaHCO3 (sodium bicarbonate)
Grain: 3 lb. 2 oz. American 2-row
1 lb. American Munich
6 oz. Weyermann CaraHell
Mash: 75% efficiency
Mash at 153 degrees F for 60 minutes
Boil: 60 minutes SG 1.080 4.5 gallons
6 oz. Light dry malt extract
6 lb. Light malt extract
1 Tsp Irish Moss at 30 minutes
Hops: 1 oz. Summit (18% AA, 60 min.)
0.75 oz. Summit (18% AA, 30 min.)
1 oz. Amarillo (aroma)
1 oz. Centennial (aroma)
Yeast: Wyeast 1968 London ESB Yeast - no starter needed
Log: Ferment for 14 days at 68 degrees F, rack and ferment in secondary for 14 days at 68 degrees F.
Dry hop with 1 oz Amarillo leaf hops and 1 oz. Centennial leaf hops the last seven days in the primary.
Carbonation: Bottle with 3/4 cup corn sugar and hold for 2 weeks at 68 degrees F or force carbonate in a keg to 2 volumes CO2.
