Water: Used purchased water.
Grain: 3 lb. 4 oz. British pale
8 oz. American victory
4 oz. Breiss Special Roast
4 oz. British crystal 50-60L
4 oz. British crystal 70-80L
4 oz. British crystal 95-115L
Mash: 75% efficiency
Mash for 60 minutes at 152°F in 5.5 quarts of water. Move bag to boil pot with 10.5 quarts of 172°F water for 10 minutes. Remove and drain bag. Combine wort from the two pots and bring the 4 gallons to a boil.
Boil: 60 minutes SG 1.063 4 gallons
3.3 lb. Light malt extract
1 tsp. of Irish Moss at 25 minutes
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast 1968 London ESB Yeast used from a prior batch
Log: Ferment one week at 68°F, transfer to secondary for a second week at 68°F.
Carbonation: Bottle using 3/4 cup of corn sugar.
