Water: Boiled, filtered water
Grain: 0.75 lb. American Munich
1.00 lb. American crystal 20L
3.0 oz. American chocolate
6.0 oz. American black patent
Steep: Add grains to 8 qts of 155 deg water.
Steep at 155 deg for 25 min.
Sparge grains into boiling pot
Add 4 qts water and bring to boil.
Add extract and honey.
Boil: 60 minutes SG 1.110 3 gallons
7.0 lb. Light malt extract
1.0 lb. Honey
Honey from Greg Stout.
Hops: 0.5 oz. Target (10.0% AA, 60 min.)
0.5 oz. Target (10.0% AA, 30 min.)
.5 oz. Hallertauer (aroma)
Yeast: White Labs London Ale 013
Made starter 36 hours in advance: 1/3 lb DME in 42 oz water.
Log: Ferment 7 days at 68 deg.
Rack to glass secondary for 7 days.
Carbonation: Prime with 3/4 cup of corn sugar (Boiled 1 min. in 2 cups water).
Bottle condition for 3 weeks at 68 deg.
