Bell's Two Fisted IPA

My humble rendition of Bell's Two Hearted Ale.

Type: Partial mash Size: 5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 57 IBU
OG: 1.066 FG: 1.012
Alcohol: 6.9% v/v (5.4% w/w)
Water: Used purchased water.
Grain: 1 lb. American 2-row
2 lb. American Vienna
8 oz. American crystal 20L
8 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Mash grains at 150°F at 1.5 quarts per lb. of malt (6 quarts) for one hour. Sparge with 2.5 gallons of 170°F water.
Boil: 60 minutes SG 1.082 4 gallons
6 lb. Light malt extract
One teaspoon Irish Moss at 45 minutes.
Hops: 1.0 oz. Centennial (10.5% AA, 60 min.)
0.5 oz. Centennial (10.5% AA, 45 min.)
0.5 oz. Centennial (10.5% AA, 30 min.)
0.5 oz. Centennial (10.5% AA, 15 min.)
0.5 oz. Centennial (aroma)
Yeast: Wyeast 1272 American Ale II Yeast in a one quart starter. Start at least 24 hours prior.
Log: Ferment one week at 68°F, transfer to secondary and ferment one more week at 68°F.
Carbonation: If kegging apply 2.5 volumes CO2. If bottling use 3/4 cup of corn sugar. Age for three weeks at 38°F then enjoy.
