13 HCU (~9 SRM)
Bitterness: 58 IBU
OG: 1.059 FG: 1.011
Alcohol: 6.2% v/v (4.9% w/w)
Water: Add 1 tsp Gypsum to boil pot prior to the wort addition
Grain: 2 lb. British pale
1 lb. American crystal 20L
0.5 lb. Dextrine malt (Cara-Pils)
Steep: Steep for 60 minutes at 154°F in 1.25 gallons purchased water with a 166°F strike temperature
Boil: 60 minutes SG 1.074 4 gallons
6 lb. Light malt extract
8 oz. Light dry malt extract
Add 1 tsp Irish Moss at 15 minutes
Hops: 1.75 oz. Centennial (10% AA, 60 min.)
0.25 oz. Centennial (10% AA, 15 min.)
1 oz. Fuggles (4.5% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast 1968 London ESB Yeast in a quart starter with a 1.040 O.G. started 24-36 hours prior
Log: Ferment one week at 68°F, transfer to secondary for one week at 68°F before bottling with 3/4 cup corn sugar in one pint water.
Carbonation: If kegging use 2.0 - 2.5 volumes CO2.
